Cauliflower “Steaks” … you guys!!! If you haven’t made them before, OMGeee!!
I use to make them a lot a couple years ago, but for whatever reason I stopped last year. Well, I’m bringing them back and today’s Cauliflower game is strong!
There is just something about roasted cauliflower that makes my tummy and heart happy. Well, really it’s any veggie that’s roasted because all the natural sweetness of that particular vegetable comes out in the roasting process. But, my favorite way to eat cauliflower is when it’s roasted.
In order to get those nice thick “steaks” you have to be pretty careful when slicing the head of the cauliflower. I usually use a pairing knife to cut the leaves off the bottom of the cauliflower. Just be careful not to cut too much of the core, because the core will help hold your cauliflower “steaks” together. Once I have the leaves and part of the core removed I make a thin slice off one side of the cauliflower and then the other side so I have two flat sides. Then I cut each cauliflower steak about 1 – 1 1/2 inches thick, you should get between 3-4 steaks per head of cauliflower.
This process works for me more times than not. The main trick it making sure you don’t cut too much of the core off or your steak will fall apart … ahem which truth be told, totally happened to me when I made them. Can you pick which cauliflower steak it is? (in the photo above) See, we all make mistakes.
Luckily this mistake can be covered in marinara sauce, cheese and pepperoni!
Woohoo!
When these babies are in your oven roasting they smell glorious but once you put them under the broiler to warm up the sauce, melt the cheese and make the pepperonis all nice and crispy they are down right irresistible!
You will be shocked at how much you’ll love them. I know my mom was. She was giving me the stink eye as I was making these pizzas, kinda like a “sweetheart, pizza is not meant to be on a cauliflower” look and then she tried them after they came out of the oven. Her tune changed pretty fast.
She loved how easy it was to make, that it cut out the gluten factor, was low carb and the flavor was way better than she thought. We made a last minute game time decision to sprinkle each cauliflower steak with garlic powder for a little extra flavor and I’m so glad we did. That little touch totally amped up the flavor and made these scream pizza night!
So if you’re looking for a healthier way to do Friday night Pizza Night try out these Cauliflower Steak Pepperoni Pizzas. I guarantee you’ll love them and so will the kids!

Processed food any way you look at it is still processed and not the healthiest option. The calorie amount and healthfulness also depend on the toppings added. If your cauliflower crust is loaded with extra cheese, sausage, pepperoni, buffalo chicken, or ranch dressing, it's still a high-calorie, high-fat pizza.
Though cauliflower crust isn't inherently healthier than traditional crust, it tends to be higher in protein and fiber. It's also higher in fat and cholesterol. Cauliflower pizza crust can fit gluten-free, diabetes-friendly, low carb, or weight loss diets.
There are plenty of pizza choices that can be considered healthy. Some options that can easily fit into a nutritious and balanced diet include a thin-crust pizza and a cauliflower-crust pizza. Topping choices on the more nutritious side are vegetables, chicken, shrimp and cheese.
A slice of cauliflower pizza, on the other hand, can have as few as 3-5 grams of carb! The cauliflower pizza takes longer to work it's way into the blood stream than the flour-made stuff, so it doesn't have that complex carb effect that often shoots our glucose levels up many hours later.
If you are trying to avoid the effects of gluten and feel better in a healthy way while still enjoying pizza, cauliflower crust is a great option. Cauliflower crust has fewer calories than traditional crust. It also has also fewer carbohydrates for those trying to reduce carbs in their diet.
Both the cauliflower crust and the whole-wheat crust offer fiber and protein, which play a key role in weight loss by helping to keep you feeling full and satisfied after a meal. But if you're not trying to cut carbs and are looking for that traditional pizza pie flavor, the whole-wheat crust is what you want.
A single slice could have anywhere from 2 to 29 grams. That's a huge range, especially because cauliflower isn't carb-heavy (a cup has 5 grams). Why the difference? Crusts may include rice or brown rice flour, sugar, tapioca starch, and corn starch, which supply carbs.
The premade cauliflower crusts in your local grocery store or pizza restaurant are rarely crafted with the keto diet in mind. If you check the ingredients, you are likely to find corn starch, corn flour, potato starch, chickpea flour, potato flour, and/or tapioca starch.
Once your cauliflower is tender and “riced” you'll need to squeeze out the moisture that cauliflower naturally contains. This is the secret to getting a dry crust that you can pick up with your hands.
Mozzarella is relatively low in fat and calories. This makes it a healthier cheese option compared to others. Mozzarella contains probiotics such as the bacteria Lactobacillus casei and Lactobacillus fermentum.
Turkey sausage and roasted chicken provide a healthy and satisfying alternative to regular pepperoni slices. Bell peppers, mushrooms, and black olives are common pizza toppings, all pleasantly nutritious. Some other nutrient-rich options include butternut squash, tofu, lox, and artichokes.
Most types of pizzas are high in calories and sodium, as they're usually topped with cheese, salty meats and other high-calorie toppings. Plus, some pizzas contain added sugar in the crust, certain toppings and sauces.
Our Pepperoni Pizza is made with real cauliflower so it's naturally gluten-free. With no added1 nitrates, no preservatives, and no artificial flavors or preservatives you'll be amazed that 410 calories for half a pizza can taste this delicious!
